Avo-Egg Toast

Finding a protein-packed breakfast that is also convenient for on-the-go can be quite a challenge. That's why we are excited to share this simple and fast option perfect for those hectic mornings. If hard-boiled eggs aren't to your liking, consider trying scrambled, sunny-side up, or over-easy eggs instead. Don't forget to add some fresh fruits or vegetables to complete this delicious morning meal.

 

Avocado & Egg Toast

Ingredients:

  • 1 piece whole-grain bread
  • 1/2 ripe avocado
  • 1 hard-boiled egg, sliced
  • pinch of salt
  • pinch of ground black pepper

Directions:

  1. Toast the bread
  2. While bread is toasting, mash avocado with salt
  3. Spread toasted bread with the mashed avocado
  4. Place the egg slices on top
  5. Sprinkle with pepper
  6. Enjoy!
